Our farmers combine the milking and production process with tradition and the traditional production of our COVAP cheeses which are impregnated with the flavors and aromas of our pastures and produced from the best raw material with premium quality milk from our farms.

Autumn 2017

First early rains, but mild.
Abundant flowering period for grass.
Slow ripening, accompanied by a significant increase in acorns.

Spring 2017

Mild temperatures and an abundance of rain throughout a prolonged spring.
Excellent flowering period, resulting in an extraordinary covering of acorns.

Summer 2017

Moderate temperatures and certain generalized storms.
Exceptional acorn ripening process.

Montanera 2018

First acorn fall at the start of October, sustained and uniform over time.
Start of a long Montanera in the first days of November.

We guarantee the traceability of our hams; thanks to an exhaustive control process from the origin with our farmers to the creation of our end product, we have been able to create a traceability project whereby you can see all the details such as year of birth, the rearing of the animal, the feed, time in the curing house, etc. for all our hams.
