Los Pedroches, holds the Protected Designation of Origin (PDO) Los Pedroches, a hallmark guaranteeing its exceptional quality and exclusivity. It comes from 100% pure Ibérico breed pigs, a unique lineage and the legacy of our ancestors, which imparts distinctive character, flavour, and perfect texture to each piece, thanks to their free-range rearing in our own dehesas of Los Pedroches.

The shoulder has undergone a long maturation process in our natural cellars for a minimum period of 24 months. Our Master Ham Curers carefully monitor the aroma, the exact level of salt, and the optimal curing conditions to create a truly unique piece, the result of a meticulous ancestral craft.
